You'll be able to do more each day as the muscles strengthen. You -have- to do more to build more muscle, since you're not adding resistance as you do with weight training.

The only benefit from doing sit ups or crunches is that these movements will harden and develop the abdominal to some degree but they will not show until your body fat levels is down to around the 10-12% mark (until you get rid of the layer of fat over the muscle).
cut out all Saturated Fats, eat protein, cut carbs, etc. see the below link for some good guidelines...
